Water Kimchi

Shall we get started?
Ingredients:
- 2 cabbages
- 1 radish
- 3 TBSP sweet rice flour
- 4 TBSP salt
- 1-1½ cup chopped green onions
- 10 chopped garlic cloves
- ¼ cup chopped ginger
- 5 TBSP fish sauce
- 3 TBSP Asian plum extract
- 2-3 TBSP salted shrimp
How to Make:
- 1. Remove the cabbage leaves from the stem and cut them into smaller pieces (any size you prefer – square, long strip, etc). Rinse the leaves in cold water.
- 2. Peel the radish and cut it into flat rectangles or cubes.
- 3. Put sweet rice flour and about 3 cups of water into a pot. Simmer and stir it until the flour is well incorporated and the mixture starts to get thick. Add salt. Keep stirring it so that it does not burn and stick to the bottom of the pot. When the mixture becomes the consistency of honey, turn off the heat and cool it off.
- 4. Pour the cooled flour mixture and water (1:2) in a big mixing bowl and give it a good mix.
- 5. Add salted shrimp, plum extract, and fish sauce to the mixture. Add chopped green onions, garlic cloves, and ginger as well (you can add chili peppers if you want it to be spicy!). Give it a good mix.
- 6. Put chopped radish in a container, then chopped cabbages on top. Carefully pour the mixture over the cabbages. The cabbages should be barely submerged – you can add more water if just the mixture is not enough!
- 7. Leave it out for 24 hours. Then, refrigerate it for about a month.
- 8. ENJOY!
